‘Energetic’ bar & grill coming to Johnson County development. But first: Lee’s Summit

An Iowa-based bar and grill chain — 30hop — is planning two Kansas City area locations.

The first will open in Lee’s Summit’s Streets of West Pryor development at 1020 N.W. Pryor Road in late 2024 or early 2025. The second aims to open in the Merriam Grand Station development at 8715 Shawnee Mission Parkway next spring.

30hop first opened in Coralville, Iowa, in 2014. Its other locations, also in Iowa, are in Cedar Rapids and Ankeny.

In a written statement, operating partner Dan Blum said the restaurant “embraces food from scratch, energetic environments, large patios, and genuine hospitality.”

Menu items served at its Iowa locations include tacos, burgers, chopped salads and dozens of beers on tap.

While final renderings and design concepts of the new restaurants have yet to be released, Blum said the company is planning a “30hop interior design 2.0.”

“There is a core of urban industrial elements, with nods to traditional pub environments but with some chic modern finishes here and there,” Blum said.

30hop is the latest of several businesses to join Merriam Grand Station, a $137 million development with retail and residential space that once housed a Kmart until it closed in 2013.

Drake Development has announced that Starbucks, Wichita-based breakfast spot HomeGrown, and Mediterranean fast-casual chain Cava will open there.

The site will also feature two apartment buildings, called the Grand Station Lofts, that are set to open in 2025.

Businesses already operating at Lee’s Summit’s Streets of West Pryor include First Watch, Cava and Firebirds Wood Fired Grill.
