If you’ve ever been to a fancy dinner party, it’s no secret to you that wine and cheese are ageless pairing companions.

But loving this delectable pairing is actually more than just good taste or common sense: It’s science.

Researchers at the Center for Taste and Feeding Behavior in France conducted a study in which 31 connoisseurs took three sips each of various types of wine: Dry, full-bodied, sweet, and fruity. The researchers then gave the testers various cheeses and told them to sip again.

According to the telegraph, tasters preferred ALL of the wine after eating cheese, regardless of type. You read that right: The wine was ALWAYS better with cheese.

“We learned the duration of the perception of astringency of a certain wine could be reduced after having cheese,” lead researcher Mara Galmarini told the Telegraph.

That means soft, fatty cheese can cut the drying effect of your vino. “In short, when having a plate of assorted cheese, the wine will probably taste better no matter which they choose.”

So drink up, friends, and don’t forget to bring a cheese plate to the party.
