Yahoo Finance Nebraska-based coffee chain opening shops throughout southwestern Illinois
Activity is brewing (pun intended) in St. Clair, Madison and Monroe counties to the delight of coffee drinkers throughout the area.
Scooter’s Coffee, a Nebraska-based drive-thru coffee shop chain, is opening new locations in southwestern Illinois with plans to open more, including a shop in Mascoutah.
The Mascoutah City Council recently passed a motion to approve a site plan and architectural elevations for a Scooter’s Coffee drive-thru location at 1300 W. Main St., the former location of Jefferson’s Restaurant.

The project includes the demolition of the existing building and construction of a new building, according to a staff report from City Manager Bill Myers to Mayor Pat McMahan and the City Council. The report included a staff recommendation for approval of the project.
The City Council’s Nov. 15 meeting packet included the minutes from the Monday, Nov. 1 meeting. The notes show that the motion to approve the project passed.
The mayor was noted as stating that “this is another great project for the city.”
The documents did not give a timetable for the shop’s opening.
Scooter’s locations in Glen Carbon and Highland opened earlier this year.
Scooter’s at 4208 S. State Route 159 in Glen Carbon became the second location in Illinois (the first is in Carbondale) when it opened July 27. The location is owned by Bob and Lindsey Semptimphelter, who moved to the area from Omaha, Nebraska, where Scooter’s Coffee is based.
Highland welcomed its own Scooter’s Coffee shop on Monday, Sept. 13, at 12571 State Route 143, the site of a former Pizza Hut restaurant that closed last September.
That store’s owner, Frey Coffee LLC, is a family-owned group operated by Debra, Corey and Jena Frey, the family of Highland Councilman Richard Frey.
“It’s my wife and daughter-in-law’s project, and my son and I are helping out,” said the councilman earlier this year. “We saw a need, and we saw in other cities how many people go to these places.”
Other shops in the works include locations in Waterloo and O’Fallon.
The Republic-Times reported in August that local business owners Kim and Kevin Schwartz signed a four-unit franchise agreement.
The article stated that the Waterloo shop was “expected to be built off Route 3 at Plaza Drive south of Schnucks.”
In August, Kim Schwartz commented on her Facebook page that the O’Fallon location would be located on “Route 50 next to IHOP,” referring to the O’Fallon shop as “the first location.”
Scooter’s offers a variety of coffee beverages ranging from regular brewed coffee to espresso drinks and blended espresso drinks. Teas, hot chocolate and smoothies are included on the menu.
Breakfast food items include breakfast burritos and sandwiches, muffins, oatmeal and several sweet treats. Seasonal items are also available.
