This Michelin-star sushi restaurant from New York is popping up at a Surfside hotel
Another New York import is coming to Miami — and it’s bringing sushi to The Surf Club.
The Michelin-starred restaurant Kosaka is popping up at The Surf Club at Four Seasons Hotel and Residences, bringing an omakase menu to the historic Hemingway Tower.
You don’t normally think of sushi when you dine at The Surf Club, which was created by Chef Thomas Keller and serves Continental cuisine reinterpreted for the modern diner. Think classic Caesar salad and oysters Rockefeller. Lobster Thermidor and Dover sole meuniere. Grilled lamb chops and veal Parmesan.
But now, you’ll walk up the spiral stairwell surrounded by photos of the social club and prepare yourself for a multi-course omakase — served on custom-made ceramics — from celebrated chef Shinichi Inoue.
Your meal will begin with a suimono (a clear fish soup), followed by Japanese small plates and sashimi. The next dish is the rare Shirako Cha-Soba, described as “deep fried winter cod milt” on the Four Seasons website. It’s probably best if you know upfront that “milt” is a more genteel word for fish sperm and that it is considered a delicacy.
Once you get past the fish sperm, there comes a series of nigiri — and maybe, if you’re lucky, more special treats from the chef. Then it’s time for dessert and Japanese tea.
The Kosaka residency is now taking reservations and will be open through most of March.
