Whenever we carve pumpkins into jack o lanterns, we never know what to do with the pumpkin seeds. It seems like such a waste to just to throw them in the trash — especially after we’ve gutted poor Jack of his insides. But when we try to roast pumpkin seeds in the oven, they never seem to come out right. We either over salt them or just burn them to a crisp.

Thankfully we’ve got this video here to turn us into pumpkin seed-making pros. We’ve got 3 easy ways to make really impressive, fancy pumpkin seed recipes. Rosemary and garlic for the zesty lovers out there, spicy chili flavored for if you want your seeds to have a smokey kick, and pumpkin spice if you want your pumpkin seeds to taste like your lattes. Try it yourself for the perfect snack to serve guests at your Halloween party.

Pumpkin Spice Seeds

Ingredients:

1 1/2 cups roasted pumpkin seeds
12 tsp sugar
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/8 tsp ground cloves
1/8 tsp ground nutmeg
1 tbsp oil

Directions:

Mix together 4 tsp of sugar with cinnamon, ginger, cloves and nutmeg in a small mixing bowl and set aside.

Heat oil over medium high heat in a sauce pan.
Add the rest of the sugar (8 tsp) and the pumpkin seeds.
Stir constantly until seeds begin to brown and sugar is completely melted.
Remove from heat and immediately pour pumpkin seed mixture into the spice mixture.
Stir until seeds are completely coated.
Allow to cool before serving.

Garlic Rosemary Seeds

Ingredients:

1 1/2 cups pumpkin seeds
1 clove of garlic
1 tbsp fresh rosemary (chopped)
1/2 tsp coriander
2 tbsp olive oil

Directions:

Preheat oven to 350.

Mix all ingredients together in a mixing bowl until seeds are completely coated.
Pour mixture onto non-stick baking sheet and spread into one even layer.
Bake for 30 minutes.
Allow to cool before serving.

Spicy Chili Seeds

Ingredients:

1 1/2 cups pumpkin seeds
1/4 tsp cayenne pepper
1/2 tsp smoked paprika
1/4 tsp chili powder
2 tbsp olive oil

Directions:

Preheat oven to 350.

Mix all ingredients together in a mixing bowl until seeds are completely coated.
Pour mixture onto non-stick baking sheet and spread into one even layer.
Bake for 30 minutes.
Allow to cool before serving.
